Recipes and Safari Chairs

Happy Thursday! 

Read on for your biweekly dose of recipe inspo and my most recent facebook marketplace find

Breakfast

Sweet Potato Crust Quiche

  • A perfect way to use up the leftover vegetables in your fridge at the end of the week!

  • I loosely followed the instructions in this recipe for the crust

  • Thinly slice sweet potatoes (ideally using a mandoline if you have one!) 

    • I used 1 medium/large sweet potato - you may need 2 more depending on how large your pan is

  • Toss slices with olive oil, salt and pepper 

  • Line your quiche dish with your slices (I used an 8 inch pie pan)

  • Bake the crust at 375 degrees for 20 minutes 

  • I had leftover onion, spinach, tomato and peppers in my fridge, which I diced up and sautéed on the stove until softened while the crust was baking

  • Whisk together 6 eggs and a splash of milk 

  • When the crust is done, dump in your softened veggies and the egg mixture

  • Top with whatever cheese you have on hand - I used crumbled cotija cheese I had left over from some tacos and it was perfect!

  • Bake everything at 375 degrees for 30-45 minutes (or until egg sets)

Lemon Ricotta Pancakes

  • Another recipe discovered through trying to use up extra ingredients in my fridge. This time the leftover ricotta cheese from homemade gnocchi!

Lunch

Mediterranean Bowls (aka grilled chicken thighs with roasted veggies and topped with tzatziki and hummus!)

  • This is one of my favorite lunches. It’s simple and super versatile based on your preferences

  • This chicken marinade is awesome 

  • You can use any veggies you like. Some of my favorites are red onion, sweet potato, zucchini, cauliflower, red pepper, and cherry tomatoes

    • Dice all veggies into roughly equal size (I leave the cherry tomatoes whole)

    • Roast veggies in a 400 degree oven for 30 min (or until your desired crispiness) 

  • My favorite way to cook the chicken is on the grill but it’s great baked in the oven or in the air-fryer, too!

  • Top your roasted veggies and chicken with a dollop of tzatziki and hummus and serve with garlic naan!

    • Homemade hummus is 100% worth the extra effort if you have the time!

    • This recipe is amazing. Every time I make it I end up eating it by the spoonful - you may want to consider doubling it!

Dinner 

Turkey Burgers

  • As soon as the weather starts to warm up (even just a littttttle), I want to grill. This recipe was my first time making turkey burgers, and I’m not sure why it took me so long! They are so easy to make. We’ve made this recipe so many times in the last week few weeks, I’m shocked I couldn’t find a single picture

  •  I love to serve these with roasted sweet potatoes

    • Cube up your sweet potatoes, toss with olive oil, salt and pepper (and a sprinkle of brown sugar :) ) and roast in a 400 degree oven for 30-45 min!

Safari Chairs!

I had my eye on the Arne Norell Safari Chair ever since I saw them in Katie Hodge’s living room. 

Not only are they hard to find, but they are also super expensive online. I couldn’t believe I found a similar style in Cincinnati! 

One chair is in good condition, but the other needs a few repairs. With these repairs in mind, I was able to get both chairs for $200. 

If anyone has any advice on leather furniture repair let me know :)
